Who We Are

  • The SustainTable Initiative empowers restaurants to adopt sustainable practices, reduce environmental impact, and foster a community of eco-conscious leaders in the food industry. By joining, restaurants commit to measurable actions that promote resource efficiency, waste reduction, and innovation in sustainability.


  • This multifaceted program includes registration, self-audits, tiered recognition levels, community engagement, and an optional food waste innovation initiative.

    1. Registration Process

    • Eligibility: Open to all restaurants, bars, and cafes committed to sustainability. No prior experience required—start where you are!

    • Sign-Up Steps:

      • Complete the online registration form, including basic restaurant details (name, location, contact info).

      • Agree to the program's sustainability pledge: Commit to ongoing improvements in areas like food waste, energy use, waste management, sourcing, and community impact.

      • Submit for approval (processed within 7-10 business days).

      • Pay registration fee.

      • Self Audit (online form) and submit for review (processed within 7 - 10 business days)

      • Receive your welcome package, and start sharing your sustainability journey!

    • Fees:

      • Nominal registration fee of $400 per year

      • Up to half of the fee ($200) may be paid in the form of gift cards to the business. These gift cards will be given to influential members of the community to help promote the program, or will be utilized in auctions to raise funds for the program. 

    • Benefits of Signing Up: Immediate access to resources, including audit templates, sustainability guides, and an online forum where other like-minded professionals can discuss a variety of topics.

  • Once registered, restaurants conduct an independent self-audit of their current sustainability initiatives. This involves reviewing practices in categories such as:

    • Energy and water conservation

    • Waste reduction and recycling

    • Sustainable sourcing (e.g., local, organic ingredients)

    • Packaging and disposables

    • Community and employee engagement

    Based on the audit score, restaurants are assigned to one of five levels. Levels are themed around fruits and vegetables, with names reflecting increasing size to symbolize growing commitment and impact. Higher levels unlock perks like priority event seating, featured website spotlights, and partnership opportunities.


  • Level 1

    Blueberry

    Entry-level commitment: Basic awareness and initial steps (e.g., recycling programs).

    - Digital welcome kit with quick-win sustainability tips and templates (e.g., waste tracking sheets) to start saving on disposal costs right away.

    - Basic website listing and a simple "Participant" badge for your menu/website/social media to signal eco-commitment to customers.

    - Full access to the online forum for free advice from peers (e.g., vendor recommendations to cut costs)

    - Registration for quarterly meetups (no extra fee).

    Level 2

    Lemon

    Building momentum: Implementing key initiatives (e.g., energy-efficient appliances).

    - All Blueberry perks, plus:

    - Enhanced digital badge ("Lemon Level") with customizable graphics for menus, doors, and social posts—helps attract eco-conscious diners and boost reviews.

    - Monthly sustainability newsletter with Florida-specific tips (e.g., water-saving in hot climates) and cost-saving case studies from other restaurants.

    - Invitation to exclusive online webinars (e.g., "Reducing Energy Bills in Miami Kitchens").

    Level 3

    Apple

    Solid progress: Multiple integrated practices (e.g., composting and local sourcing).

    - All previous perks, plus:

    - Featured "Apple Level" spotlight on the program website (with photo, short story, and link to your site) to drive local traffic and SEO benefits.

    - Personalized level-up coaching session (virtual, 30-60 min) with program experts to identify quick ROI opportunities (e.g., grants or rebates for upgrades).

    - Free promotional materials (e.g., table tents or social templates) highlighting your achievements to engage customers and encourage repeat visits.

    Level 4

    Grapefruit

    Advanced dedication: Comprehensive strategies across operations (e.g., zero-waste goals).

    All previous perks, plus:

    - Premium website feature: Dedicated case study page (your restaurant's story, photos, metrics like waste diverted) for strong marketing collateral.

    - Speaking or panel opportunity at one quarterly meetup (builds your reputation as a leader and attracts talent/customers).

    - Enhanced Closed Loop Kitchen support: Priority processing slots, co-branded product development help (e.g., turning your scraps into sellable items), and revenue-share guidance.

    Level 5

    Watermelon

    Leadership excellence: Innovative, industry-leading efforts (e.g., full closed-loop systems).

    - All previous perks, plus:

    - Top-tier recognition: "Watermelon Leader" badge + prominent homepage feature on the program site, plus inclusion in annual "Top Sustainable Restaurants" list/promotions.

    - Exclusive perks for Closed Loop processing, plus help marketing upcycled products (e.g., joint pop-ups or retail partnerships).

    - Invitations to co-host quarterly events or lead workshops (positions you as an expert, great for PR and staff morale).

    - Annual "impact report" customized for your restaurant (metrics on savings, waste reduction, etc.) to use in grant applications, loans, or investor pitches.

    - Potential revenue boosters: Program co-marketing (e.g., featured in newsletters/social to thousands) to increase foot traffic and premium pricing power.

  • Use the program's online audit survey. Restaurants are required to submit results annually for level reassessment and potential advancement, but can submit up to once a quarter for level reassessment and reassessment fee. Each audit is subject to verification through documentation.

  • This innovative add-on helps restaurants turn waste into value, reducing landfill contributions and creating new revenue streams.

    • Overview: Participating restaurants analyze their food waste streams and opt into processing scraps into retail products. This "closed loop" approach promotes circular economy principles.

    • How It Works:

      • Waste Analysis: Restaurants track and report common waste items (e.g., via a log sheet provided by the program).

      • Opt-In Processing: Partner with local processors (or program-affiliated facilities) to transform scraps.

      • Examples of Transformations:

        • Spent grains from beer brewing → Flour for donuts or baked goods.

        • Used coffee grounds → Cookies or other infused treats.

        • Fruit scraps → jams.

    • Benefits:

      • Reduced disposal costs.

      • New retail items to sell (e.g., branded "upcycled" products).

      • Marketing boost: Highlight participation in menus and social media for eco-conscious customers.

    • Opt-In Details: Free to join for registered businesses; processing fees based on volume. 

    Participating restaurants have flexible options for how they engage with the Closed Loop Kitchen processing:

    • Pay-as-You-Process Model — Restaurants pay a modest processing fee based on the volume and type of food scraps provided. This covers collection, transformation (e.g., spent grain flour, or coffee ground cookies), and quality assurance. In return, you receive finished upcycled products that you can sell directly through your own establishment—keeping 100% of the retail revenue to create a new income stream and offset the fee.

    • Revenue-Share Model — Opt for no upfront processing fee. Instead, the program handles processing and distributes the finished products through external channels (e.g., partnered retailers, online marketplaces, pop-ups, or wholesale). You receive a percentage of the net sales revenue once items are sold. This zero-cost entry point minimizes risk while still turning your waste into passive income.

    Both models are designed to reduce your disposal costs, generate value from what was previously waste, and support your sustainability goals. Fees or shares are structured to be fair and scalable—starting small for pilot participants.
